French Coconut Pie


If I liked coconut, this would be one of my favorites. 

This is basically a chess pie that's kicked up a little bit.  I'm not sure why this is referred to as a French Coconut Pie.  But I do know that every time I bake one, everyone raves.  Super fast to get mixed up (without a mixer!) and then a slow baking time works together to give you a lovely dessert for company or family.

1 stick butter, melted
1 1/2 cups sugar
3 eggs, lightly beaten
1 1/4 cups shredded coconut
1 T. white vinegar
1 t. vanilla
1 pie crust

Preheat oven to 350 degrees.  In a medium bowl, combine all ingredients and pour into pie crust.  Bake on middle rack of oven for 45 - 50 minutes.  Remove from oven and cool on wire rack.
