3 medium zucchini, chopped
1 ½ tablespoons lemon juice
3 tablespoons olive oil
1/3 cup packed finely chopped mint leaves
¼ cup finely chopped fresh parsley
1/2 cup toasted sliced almonds
1/2 T. minced fresh rosemary
1/2 cup toasted sliced almonds
1/2 T. minced fresh rosemary
Layer the tomatoes on 4 salad plates. Toss remaining ingredients together and serve over the tomatoes.
