1 can salmon, drained and flaked
1 egg, lightly beaten
1/8 cup finely diced bell pepper
1/8 cup finely diced red onion
1 t. Old Bay seasoning
2 T. all purpose flour
1 clove garlic, minced
1 t. lemon zest
1 T. lemon juice
Mix all ingredients lightly with a fork. Shape into patties and fry in a small amount of canola oil over medium high heat until browned on both sides. Top with chopped parsley and serve.
