Open Face Blue Cheese & Bacon Sandwich


I will attempt to explain this sandwich! I cooked some bacon with every intention of making a bacon and cheese sandwich. I opened the refrigerator for my slice of American Cheese and spied the container of blue cheese.

My brain went to wedge salads with blue cheese and bacon.....wait did I have lettuce? No. Sigh.

So .... Plan B.

I placed some crumbled blue cheese on a piece of bread and put in under the broiler in the toaster oven until the cheese was all melty and gooey. It also toasted the outside of the bread a little bit.  

Then I added the sliced bacon on top. I was ready to eat it open faced, but decided I'd go ahead and toast another slice of bread for the top. But if I had placed it on top....you wouldn't be able to see how gorgeous the cheese and the bacon are together!

So, it was added and I enjoyed every bite.  

Note to self:  Next time make sure I have lettuce when I make this sandwich!
