Twice Baked Potato


What better side dish to go along with the crock pot bbq ribs than a delicious twice baked potato?  If you have used your crock pot to help with the cooking, now is the time to use your microwave to help speed things along with your side dish.  Of course, if you would like to bake your potatoes in the oven there's nothing wrong with that!

4 medium Russet potatoes
2 T. butter, cubed
salt and pepper to taste
1/3 cup finely shredded Cheddar cheese
2 T. milk

Garnishes:
crumbled bacon
sour cream
chives

Bake (or microwave) potatoes until done.  Slice potatoes in half and when cool enough to handle, carefully scoop out potatoes, leaving about 1/4" inch of potato in the skins so they will keep their shape.

Place the baked potatoes in a medium bowl and add butter, salt and pepper and stir until butter melts.  Add cheese and stir to combine and add the milk and mix that in.  Taste and add a little more salt and pepper if needed.

Preheat oven to 300 degrees.

Carefully spoon the filling into the shells.  Pile the filling up high!  Place the filled potato skins on a baking sheet and put in the oven for about 10 minutes so that the mixture is heated through.

Remove from oven and garnish with bacon, sour cream and/or chives.

Serve immediately.
