It's Mediterranean Monday! And as an added bonus (again!) it's a crock pot recipe!! You can use either boneless pork loin or boneless pork chops. The spices and herbs listed are suggestions. Add more or less to suit yourself.
1 medium yellow onion, very thinly sliced
1 T. chopped garlic
1/2 t. fennel seeds
1 t. dried marjoram
1 t. dried oregano
2 pounds boneless pork chops or boneless pork loin
salt and freshly ground black pepper
2 T. Greek seasoning
1 cup chicken broth
1 box couscous, prepared with 1 cup water and 1/4 cup lemon juice
3 cups packed spinach, steamed
lemon pepper
Set crock pot setting to low. Add sliced onions, garlic, fennel seeds, marjoram and oregano.
Lightly salt the pork and season with the black pepper and Greek seasoning. Lightly press the seasonings into the pork so that it sticks. Gently place the pork into the crock pot and slowly add chicken broth. Cover and let cook 7 - 8 hours.
When ready to serve, prepare couscous. While couscous cooks, steam the spinach. When the couscous is ready and the spinach is soft, add the spinach to the couscous and stir to combine. Season with a little lemon pepper.
Plate the couscous, top with a slice or two of pork and gently spoon some of the onion slices over the top.
