With all the rich food for the Mardi Gras party, I decided we needed a nice vitamin loaded baked sweet potato to accompany those dishes.
Simply lightly oil sweet potatoes with olive oil, place on a foil lined baking pan. Prick the potatoes all over with a fork and bake at 400 degrees for 1 - 1 1/2 hours until a knife will pierce the potato easily.
For toppings, I offered butter, brown sugar, cinnamon sugar, white sugar, mini marshmallows and chopped pecans.
