I was searching for something new to enjoy for our New Year's Day breakfast instead of the usual sausage balls or breakfast casserole. I went to Pioneer Woman's Year of Holidays cookbook and found this great baked French toast recipe. Instead of plain French bread, she uses "everything" bagels torn into chunks and adds little chunks of cream cheese throughout. This is a great new breakfast item that will be worked into the regular rotation. Happy New Year!
6 everything bagels torn into chunks
butter for greasing the pan
8 oz. cream cheese
2 cups grated cheddar cheese
8 eggs
2 cups whole milk
1/2 cup heavy cream
1 T. chopped chives
1 t. dry mustard
1/2 t. cayenne pepper
1/2 t. salt
Put the chunks of bagels into a greased 9 x 13 baking dish.
Cut the cream cheese until chunks and scatter them all over the top of the bagels. Sprinkle on the grated cheese.
Combine the eggs, milk, cream, chives, dry mustard, cayenne and salt in a bowl. Whisk until well combined. Pour over the bagels.
Cove baking dish with foil and refrigerate for several hours or overnight.
When you're ready to bake the casserole, preheat oven to 350 degrees and bake, covered, for 45 minutes. Remove the foil and continue baking for 15 - 20 minutes until the top is golden brown. Cool for 15 minutes before serving.
Sprinkle extra chopped chives over the top before serving.
