So simple, so easy. Burgers don't have to be ground chuck you know. Tonight I almost made salmon patties and the usual vegetable side dishes, but with a few changes in ingredients, salmon burgers took center stage.
1 can boneless/skinless salmon, drained and flaked
2 eggs, lightly beaten
1/4 t. Old Bay seasoning
1 T. lemon juice
1 T. chopped fresh parsley
2 cloves garlic, grated
a few grinds black pepper
1/2 cup bread crumbs
1 T. minced red onion
2 - 3 T. vegetable oil
In a medium bowl, lightly mix all ingredients (except vegetable oil) with a fork.
Heat oil in a large skillet over medium high heat. Shape salmon mixture into four patties and place into skillet. Cook, turning occasionally, until burgers are cooked through. Drain on a paper towel lined plate.
Lightly toast hamburger buns and serve with lettuce, tomatoes and easy smeasy tartar sauce.
