Lemon Ice Box Pie Cheeseball with Graham Crackers


Another winner from Elizabeth's Gourmet Creations.  The star of this recipe is the Lemon Ice Box Pie mix.  Instead of making a pie, I combined the mix with two 8 oz. blocks of cream cheese.  After mixing together, I placed the bowl in a refrigerator for an hour or so to chill.  

I crushed up a few graham crackers and spread them out on a sheet of plastic wrap.  Then, I spooned out the filling, rolled it into a ball, and rolled the cheeseball in the graham cracker crumbs. 

A delicious, pretty dessert ready in no time!
