Flash Seared Potatoes with Rosemary


This is a great alternative to fried or mashed potatoes.  Small "baby" potatoes are quickly blanched in boiling water, sliced in half, then flash seared in hot olive oil with Italian seasoning and chopped rosemary!  Prepare more than you think you'll need, they are addictive!

1 lb. small baby potatoes
2 - 3 T. olive oil
2 t. dried Italian seasoning
2 T. chopped rosemary
1 t. minced fresh garlic
salt and freshly ground pepper 

Bring a medium saucepan of water to a boil.  Add potatoes and boil just until a knife can easily be inserted. You want the potatoes to be able to hold their shape.

Drain potatoes and slice in half.  Heat olive oil in a large skillet over high heat.  Add potatoes and "flash fry" until the cut sides begin to brown and slightly char.  Add Italian seasoning, rosemary,  and garlic.  Cook for another minute or so.  Remove from heat and salt and pepper to taste.

Serve immediately.
