Y'all know how I love to find new products at the grocery store and bring them home to experiment with new ideas! Last Saturday, I spied a new Zatarain's product: Cheddar Garlic Biscuit Mix. Knowing how much I love cheddar, garlic, AND biscuits, into the buggy the mix went.
I followed the simple directions on the box and these were ready in minutes. The cheddar and garlic flavors are not overwhelming. The biscuit was soft and tender. I followed the suggestion on the box and brushed the tops of the biscuits with melted butter as soon as they came out of the oven.
Everyone at the table enjoy these tasty biscuits and there was some lively discussion on who would get the last one on the platter!
Of course, these are so easy to make, you could have them anytime.
But, I had a pork tenderloin and here's where my experimentation took over.
1 (1 - 1 1/2 lb.) pork tenderloin, sliced into 1 inch pieces
Zatarain's Creole Seasoning
1 T. vegetable oil
Condiments:
Zatarain's Creole Mustard
Zatarain's Hot Sauce
Lightly sprinkle the Creole seasoning on both sides of the sliced tenderloin. Heat oil over medium-high heat in a large cast iron skillet.
Add a few pieces of the tenderloin at a time into the skillet. Don't crowd the pieces. Flip over when the first side has browned. The slices are thin, so it won't take but a few minutes for the pork to sear on both sides. Continue until all the pork is cooked.
Slice open the Cheddar Garlic Biscuit and add a few pieces of the pork. Add a touch of Creole Mustard and/or hot sauce, if desired. Enjoy!
