Cheesy Parmesan Smashed Potatoes



When, and not if, our world becomes somewhat normal again, go to the grocery store and purchase a pound of those little red potatoes. 

Of course, these types of potatoes are often referred to as "new potatoes" and are usually found at Farmers' Markets.  Gently boiled until tender and served simply with salt and pepper and butter, these are a staple on my "veggie only" supper meal plans.

If you have any of the potatoes left over, refrigerate overnight, and I'll show you an entirely different way to enjoy them!

Preheat oven to 400 degrees F.  Spray a rimmed baking sheet with non-stick spray.

Place the potatoes on the baking sheet, and using the bottom of a drinking glass, gently press down and carefully flatten the cooked potatoes.

When all of the potatoes are smashed, drizzle with olive oil and lightly salt and pepper.

Place the baking sheet in the oven for 10 - 15 minutes, remove from oven and using a metal spatula, flip over the potatoes.  Drizzle this side with olive oil and lightly salt and pepper.

Return to oven for 5 minutes or so and remove from the oven. Sprinkle with grated Parmesan cheese and return to oven for another 3 - 5 minutes.

Sprinkle with chopped parsley and serve.
