Instant Pot Cooking: Steel Cut Oatmeal with Apples


Did you realize you can use your Instant Pot as a slow cooker? And added bonus for this recipe is the "keep warm" option!

This recipe makes a large batch of healthy oatmeal.  It cooks for six hours on the slow cooker option. Put it on the cook as you go to bed, let the keep warm option take over, and your breakfast is ready for you when you wake up the next morning.

1 t. coconut oil
4 cups diced Granny Smith apples (about 1 pound)
2 cups steel-cut oats
7 cups water
1/2 cup honey
1/2 t. salt
1/2 t. cinnamon (or allspice)
1 (13.66 oz.) can coconut milk
Garnishes:  nuts, diced apples, cinnamon sugar

Coat the inner pot of a 6 quart Instant Pot with the coconut oil. Stir together the apples, oasts, water, honey, salt, cinnamon and coconut milk in the inner pot.  

Lock the lid; turn Pressure Valve to "Venting."

SLOW COOK for 6 hours.  Stir well before serving.

Garnish with toasted cashews or almonds, diced apples, and/or cinnamon sugar.
