Vintage Recipes: Oatmeal Buttermilk Waffles


This morning I chose another recipe from the Vintage Recipe Card box!  Back when these recipes were developed and printed, "whole grains" was not a familiar phrase in our daily diets.  When I saw these waffles included whole rolled oats, I knew I wanted to try them.  But remember, also back in the 1980's apparently it wasn't unheard of to include one-half CUP of bacon drippings or melted shortening into this batter.  I modified that item by add 1 TABLESPOON of melted bacon drippings.  That was plenty to add a savory flavor without causing my heart to become angry with me!

Here's the original recipe card:


1 cup all-purpose flour
1/4 cup white or yellow cornmeal
1 cup uncooked rolled oats
2 T. baking powder
1/2 t. baking soda
1/2 t. salt
3 eggs
2 cups buttermilk
1/2 cup bacon drippings or melted shortening

In a large bowl, stir together flour, cornmeal, oats, baking powder, baking soda, and salt.

In a separate bowl mix together eggs and buttermilk with a fork.  Pour over dry ingredients.

Add bacon drippings or shortening and stir until dry ingredients are moistened.

Pour some of the mixture into preheated waffle iron until about two thirds full.  Bake until golden and crisp, about 4 minutes.  Repeat with the remaining batter.  Serve immediately.


These waffles were delicious!  You could definitely pick up on the texture of the oats and the almost nutty like flavor.  If you're searching for a new way to get whole grains into your diet, try this recipe!
