Chicken Sausage Hash with Brussels Sprouts and Apple

 


I've always wanted to try the Chicken Sausage with Apples.  This recipe is the ultimate Fall meal. Diced potatoes and onions, combined with chicken sausage, and finished with thinly sliced Brussels sprouts and diced apples?  That's Fall in a skillet!  The coarse grain mustard and apple cider vinegar are the perfect pair to bring all these ingredients together for the ideal Fall supper in about 30 minutes.

3 T. vegetable oil, divided
1 lb. red skinned potatoes, diced
salt and black pepper
3/4 cup chopped onion
1 pkg. chicken-apple sausages (12-14 oz.) such as Aidells, cut into 1/4-inch-thick slices
3 cups thinly sliced Brussels sprouts
1 large red apple, diced
1 T. minced garlic
3 T. apple cider vinegar
2 T. chopped thyme
2 T. coarse-ground mustard

Heat 2 T. oil in a cast iron skillet over medium-high.  Add potatoes, season with salt and pepper, and cook, stirring occasionally, until nearly tender, about 10 minutes.

Stir in onion and cook until softened, 3-5 minutes; transfer potatoes and onion to a plate. Reduce heat to medium.

Add remaining 1 T. oil to skillet; add sausages and cook until lightly browned, 4 - 6 minutes.

Stir potatoes, onion, sprouts, apple, and garlic into skillet; cook, stirring frequently, until vegetables soften, 3 - 4 minutes.

Whisk together vinegar, thyme, and mustard; stir into skillet.  Taste and season with salt and pepper if needed.
