Trader Joe's: Kung Pao Chicken

On a recent visit to Trader Joe's, I chose several new products to try and share the results with all of you!

Today was a hectic day with several appointments, so for tonight's dinner, we decided that we'd whip up "Trader Ming's" Kung Pao Chicken.

Super fast and easy, this is the ideal busy weeknight meal.  I took pictures along with each step. The vegetables, sauce, and peanuts were in individual packages.

Heat one teaspoon of vegetable oil in a large non-stick skillet.  Add chicken and stir fry until warm and golden, about 6 - 8 minutes.

Add vegetables and continue to stir fry until they begin to soften and color, about 3 minutes.

Once vegetables warm through, add sauce and stir to cover and warm.

Add peanuts and toss for one minute longer.  Remove from heat and serve.

Serve over cooked rice and top with thinly sliced green onions and sesame seeds.

This package made two generous servings for us.  The cost was a very budget friendly $5.99.  The chicken was tender and cut into nice bite-sized pieces.  The vegetables had a combination of onions, peppers, water chestnuts, and chilis.  There was a nice portion of the sauce which had a fair amount of heat with a tangy soy ginger flavor.  Our conclusion:  We loved it!

We don't have a TJ's near us. I wish they would build one here in MS.
