Southwestern Jalapeno Onion Chicken Burgers

 


The adventure of preparing meals from ingredients in the freezer/pantry/refrigerator continues! Today I thawed ground chicken and decided burgers would be on the menu. Ground chicken can be bland without some extra help.  To the pantry I went and these delicious burgers are the result.  I added red onion and jalapeno TO the burgers instead of as a topping.  Yum!

1 1/2 lbs. ground chicken
1/2 t. granulated garlic
1/2 t. chili powder
1/4 t. ground coriander
1/2 t. Kosher salt
2 T. finely minced red onion
1 medium jalapeno, finely minced
1 T. olive oil
Sliced pepper jack cheese

In a medium bowl, combine the first seven ingredients.  Shape into patties. 

In a large skillet, heat olive oil over medium-high heat.  Place the burgers in the skillet.  See the bits of onion and jalapeno?


Cook until the burgers are nicely browned on that side.  If they begin to brown too much or too quickly, lower heat to medium.  Flip and continuing cooking until the burgers reach an internal temperature of 165 degrees F.


When burgers are cooked to temperature, lower heat to low and place a slice of pepper jack onto the burgers.  When the cheese has melted, serve immediately on toasted buns with your favorite condiments.
