Jalapeno Bacon, Holiday Pecan, and Pineapple Ham Cheeseballs


Oh, the cheeseballs!  The utter simplicity of cream cheese, seasonings, and shredded cheese mixed together, formed into a ball, and rolled in a tasty coating of finely chopped nuts or savory bits of bacon.

It's not Christmas at our house without cheeseballs either being made, in the refrigerator, or on a party platter surrounded by tasty crackers.

With this blog post, I'm going to share several recipes for our favorites!

Jalapeno Bacon Cheeseball
This cheeseball brings some heat to the party!  If you want a milder version, substitute cheddar cheese for the pepper jack and reduce the jalapenos from three to two.

2 (8 oz.) blocks of cream cheese, softened slightly
3 T. sour cream
1 t. granulated garlic
3/4 t. onion powder
1/2 t. freshly ground black pepper
2 cups shredded pepper jack cheese (reserve an additional 1/2 cup)
12 slices bacon, cooked and crumbled (divided)
3 jalapenos, minced (divided)
4 green onions (white and green parts) thinly sliced (divided)

Using a large stand mixture, on medium speed, combine the first six ingredients until well blended.

Reduce speed to low and add half the bacon, half the jalapenos, and half the green onions.

Spread a large piece of plastic wrap on countertop.  Spoon out the cheese mixture onto the plastic wrap and shape into a ball.  

Combine the reserved bacon, jalapenos, green onions, and 1/2 cup shredded cheese.  Gently press the ingredients into the cheese ball to completely cover the outside.  

Wrap the cheeseball tightly in plastic wrap and refrigerate overnight.  When ready to serve, remove from refrigerator at least 20 minutes prior to serving.  Serve with crackers.

Holiday Pecan Cheeseball
This cheeseball is a classic mild cheese and pecan version.  Lightly seasoned with dried herbs and a touch of Worcestershire, your guests will enjoy this one.

2 (8 oz.) packages cream cheese, softened
1 cup shredded sharp cheddar cheese
1 cup shredded mild cheddar cheese
3/4 t. garlic powder
1/2  t. dried oregano
1/2 t. dried basil
1 t. dried parsley
1/8 t. pepper
1/2 T. Worcestershire sauce
1 cup pecans, finely chopped (divided!)

Place 3/4 cup finely chopped pecans in a shallow dish and set aside.

In a large bowl, mix the cream cheese until smooth.  Add the cheddar cheeses and mix until just combined. Add the seasonings, Worcestershire, and 1/4 cup of the chopped pecans over the cheese mixture and mix until thoroughly combined.

Carefully roll the cheese into a round ball.  Coat in pecans by gently scooping up the pecans and press them onto the cheese ball with the other.  Turn the cheese ball as you go and let the excess pecans fall back into the dish.  Wrap the cheese ball with plastic wrap and refrigerate until ready to serve.

Ham and Pineapple Cheeseball
We all know those persons who love ham and pineapple pizzas.  Well, this cheeseball will become one of their favorites as well!

2 (8 oz.) packages cream cheese, softened
1 cup shredded sharp cheddar cheese
1 cup shredded mild cheddar cheese
1 t. seasoned salt
1 cup finely diced ham
3/4 cup crushed pineapple (well drained!)
1/2 T. Worcestershire sauce
1 cup pecans, finely chopped (divided!)

Place 3/4 cup finely chopped pecans in a shallow dish and set aside.

In a large bowl, mix the cream cheese until smooth.  Add the cheddar cheeses and mix until just combined. Add the seasoned salt, diced ham, crushed pineapple, Worcestershire, and 1/4 cup of the chopped pecans over the cheese mixture and mix until thoroughly combined.

Carefully roll the cheese into a round ball.  Coat in pecans by gently scooping up the pecans and press them onto the cheese ball with the other.  Turn the cheese ball as you go and let the excess pecans fall back into the dish.  Wrap the cheese ball with plastic wrap and refrigerate until ready to serve.
