One Skillet Pierogies with Ham and Alfredo Sauce


Today was "de-Christmasing" day at Chez Lolly.  As we were busy packing and sorting decorations and all the holly jolly items, we realized it was way past lunch time and I needed to head to the kitchen!  

Yes, ham continues to make a lot of appearances at breakfast, lunch, and supper and I'm sure Sweet Harold expected yet another ham sandwich.  I had other plans.

I had a 1 lb. package of 4-cheese pierogies in the freezer.  Of course, there was ham in the fridge along with a bell pepper.  The pantry held onions, garlic, and a jar of Alfredo sauce.  Just like that, a recipe was born!

1 T. olive oil
1 T. unsalted butter
1 small yellow onion, diced
1 small green bell pepper, diced
1 t. chopped garlic
2 cups cubed cooked ham
1 lb. 4-cheese pierogies
1 (15 oz.) jar Alfredo sauce
salt and pepper to taste
chopped fresh parsley

In a large skillet, warm olive oil and butter over medium-high heat.  Add onion, bell pepper, garlic, and ham.  Reduce heat to medium and stir occasionally.  Let the veggies soften and the ham begin to brown; 5-7 minutes or so.

Add the pierogies and continue to carefully stir every minute or so.  Let the pierogies begin to brown and cook while combining with the ham and vegetables.

The internal temperature of the pierogies should be 160 degrees F.  This is the how you want them to look.


Actually, I believe I would have been happy with the dish if I had added another knob of butter here, tossed to coat everything and plated this deliciousness up!

But I didn't........

Reduce the heat to low and add in the jar of Alfredo sauce.  Carefully stir to coat the pierogies with the sauce and let the sauce come to a simmer.  Top with about a tablespoon of the fresh chopped parsley and stir that into the mix.


I served with garlic Texas toast and another sprinkle of fresh parsley.  This was super easy and fast.  AND only one skillet!
