Instant Pot Cooking: Roasted Garlic and Cracked Black Pepper Pork Tenderloin for Tacos

 


I picked up a Smithfield Roasted Garlic and Black Pepper Pork Tenderloin recently when they were on sale.  This is the 1.5 lb. version and we had two totally different meals today.


I brought out the Instant Pot and cooked half of the tenderloin for these fun street tacos (served on Mission Brand Zero Carb tortillas).  

Now let's make some tacos!

Set the Instant Pot to Saute function and add a tablespoon or so of vegetable oil to the inner pot.  When the oil begins to shimmer, carefully add 1/2 of a Smithfield Roasted Garlic and Cracked Black Pepper pork tenderloin into the inner pot.  Sear the tenderloin on all sides until you have a nice browned exterior.  This will take about 5-7 minutes.  When the pork has browned, remove the meat and press cancel.  Add one cup of chicken stock to the pot and use a wooden spoon to scrape up any browned bits that are stuck on the bottom.  This will give you a lot of added flavor to your finished dish. 

Place lid on securely and make sure the vent is set to "sealing."  Pressure cook on high for 12 minutes.  Let pressure naturally release which will take about 15 minutes.  Carefully remove lid and test with two forks to see if the pork easily shreds.  If it does not, repeat the pressure cooking process for another 3 - 4 minutes.

Place tenderloin on a plate and shred with two forks.  You'll want the pork to look like this.


For the tacos, you can use either corn or flour tortillas.  As I blogged in an earlier post, right now my favorite is Mission Carb Free tortillas.  Simply place the tortilla in a dry skillet over medium high heat until lightly browned.  Repeat until you have all the tortillas you'll need for your meal all browned.

Now it's time to load up with your favorite toppings!  For today's meal I offered finely shredded cabbage, diced onions and jalapenos, shredded pepper jack cheese, cilantro, and taco sauce. 


A few slices of fresh limes to squeeze over the top just before taking that first bite is the perfect little extra!
