Folios Crust Low Carb Pizzas


I continue our quest for a low carb pizza crust that can be yummy AND satisfying.  I spied these wraps at Publix recently.  They're made with Parmesan cheese!


One of the suggested uses on the package is for pizza crust.  Challenge accepted!

I had cooked bacon, mushrooms, and diced ham in the fridge.  So before I began anything to do with the crust, I heated 1 T. of olive oil in a small skillet over low heat.  Into the skillet, I crumbled three slices of cooked bacon, added two white button mushrooms (sliced), and about 1/3 cup of diced ham.  I let this cook for a few minutes with 1/4 t. salt and a few grinds of black pepper.  I then removed the skillet from the heat and prepared the "crusts."

Preheat the oven to 450 degrees F.  Each wrap is layered on a separate sheet.  I placed the wrap into the microwave for 30 seconds.  The cheese softened and I placed the wrap on a parchment lined rimmed baking sheet.  Then I repeated the process with the other wrap.

I spread a few tablespoons of low sugar pizza sauce on each "crust."  Then it was time to divide the prepared toppings onto each crust.


Then I added a few sprinkles of dried Italian seasoning on top of the fillings.  Next, add Parmesan cheese and either mozzarella or an Italian blend cheese on top.


Pop the pizzas into the oven for 3 - 5 minutes until the cheese has melted and beginning to brown.  Also, the crust of cheese will begin to brown and bubble as well.  

Time to dig in!


Again, these are NOT yummy yeasty pizza crusts.  BUT, when you're eating low carb or keto, this is a tasty substitute!

  1. We are suppose to be getting a Publix here in Mississippi. It won't be close, but we plan on going there.
