Keto Bacon and Cheese Crustless Quiche

 


If you're on a Keto diet plan, or simply enjoy bacon, eggs, and cheese, here's a breakfast recipe that you'll love!  You can use your favorite melty cheese, or swap out the bacon for diced ham or crumbled cooked sausage.  The addition of the cream cheese adds a unique creaminess that is delicious.  I diced up the bacon before cooking, but you could certainly fry up the slices and then crumble.  

6 - 8 slices bacon, cooked and crumbled
6 eggs, lightly beaten
1/2 t. salt
1/2 t. black pepper
2/3 cup heavy cream
1 1/2 cups of coarsely shredded cheddar, plus 1/2 cup for topping
2 oz. softened cream cheese
chopped parsley for garnish

Preheat oven to 350 degrees F.  Fry bacon in a 10-12 inch cast iron or ovenproof skillet and remove to a paper towel lined saucer.  Reserve 1 T. of bacon drippings in the skillet.

While bacon is frying, whisk together eggs, salt, pepper, and heavy cream.  

Stir in the 1 1/2 cups of shredded cheddar and the cream cheese along with all of the bacon except for 1 T. of crumbled bacon.

Pour egg mixture into skillet and place in oven.  Bake for 18-20 minutes.  Remove from oven and top with remaining cheese and bacon.  Return to oven for 2 - 3 minutes.  Remove from oven and top with chopped parsley.

Let rest a minute or so before slicing and serving.
