Low Carb: Carne Asada Steak in Chipotle Tortilla Cups


This is a simple meal that you can whip together in just a few minutes. The street taco sized tortillas fit nicely in a muffin tin and the Kinder's Carne Asada Seasoning adds a wonderful flavor!


You can use any flavor or type of tortilla you prefer, as long as they are the street taco size.

1 T. olive oil
1/2 lb. sirloin steak, chuck tender steak, or top round steak, thinly sliced against the grain
1 T. Kinder's Carne Asada seasoning
6 street sized tortillas
1/2 cup shredded cheddar cheese
2 - 3 T. finely shredded lettuce
2 - 3 T. finely chopped onions
taco sauce or salsa
sour cream

Preheat oven to 350 degrees F. Heat olive oil in a medium sized skillet over medium-high heat.  Season the steak strips with the carne asada seasoning and toss to coat.  Place the steak strips in the skillet and cook, stirring freqently.  Remove skillet from heat when the steak has cooked through.

Preheat the tortillas in the microwave for a 7-8 seconds to make them more pliable.  Then fit each tortilla into the muffin tin openings.  

Divide the steak strips into the tortillas and top with the shredded cheese.


Place the muffin tin in the oven for 6 minutes or until the cheese has melted.  


Use a thin metal spatula to remove the tortilla cups from the muffin tin and place on a plate. 

Top with your favorite taco toppings and serve immediately.
