2 cups hot water
1 t. salt
2 T. vegetable shortening
1 package (15 ounces) raisins
1 t. ground cinnamon
1 t. ground cloves
3 cups all-purpose flour
1 t. baking soda dissolved in 2 teaspoons hot water
Buttercream frosting (optional)
Preheat the oven to 350 degrees. Grease a 9 x 13-inch baking pan.
In a pan, combine brown sugar, hot water, salt, shortening, raisins and spices. Bring to a boil, then remove from the heat and let cool to room temperature. In a bowl, combine flour and dissolved baking soda, add to the batter and mix well. Pour into the prepared pan. Bake for 30 minutes or until a toothpick inserted into the center comes out clean. Cool in the pan.
To make the frosting: mix 1 stick softened butter, 1 box of confectioner's sugar, 3 tablespoons milk, and 1 teaspoon vanilla in a medium bowl at medium speed. When smooth and creamy, spread on cooled cake.
If you'd prefer, you can skip the buttercream frosting and simply dust the top of the cake with powdered sugar.

This is the recipe I use, though I do not frost. My husband's family always has this cake at gatherings. I have also made 'mini' loaves at the holidays, wrapped in parchment for gifts....soooo good.
