Mini Jack-O-Lantern Quesadillas

Before I even begin to post the recipe, a huge shout out to Sweet Harold for handling this project for me.  Listen, I know my skill set and patience level.  To sit down at the kitchen table with a paring knife and even begin to cut out scary/fun faces on mini tortillas was not going to happen.  BUT, he happily sat down and begin the process.  These are adorable, aren't they?

You can make as many as you want or as few as you need.  Get the street taco size tortillas.  Using a sharp paring knife, place one tortilla at a time onto a cutting board and carve a jack-o-lantern face into a tortilla.  Repeat using the same face or make them up as you go along.  You will need to have as many solid (uncut) tortillas as you have faces prepared.

Preheat oven to 400𝇈F.  Spray a large baking sheet with non-stick olive oil spray.  Place the solid tortillas on the baking sheet and sprinkle with about 1/3 cup of your favorite shredded cheese.  I went more in the middle and less toward the edges.

Top each tortilla with the jack-o-lantern carved tortilla, making sure they line up with the bottom tortilla.

Brush the top tortilla with olive oil or spray with olive oil spray.  Bake on the middle rack of the oven for 8 - 10 minutes or until the cheese is melting and bubbling.

Let the quesadillas rest for a few minutes before transferring to your serving platter.  If needed, place on the cutting board and trim any melted cheese that might have seeped out of the edges.

Serve immediately.
