Crunchy Onion Rings


This is a family favorite that will soon become one of your's too.  Very soon I plan to (wo)man the onion ring fryer, let the family dig in to burgers and hot dogs and just keep piling the onion rings on a platter and let them eat them as fast I can fry them.  They're that good.

Ingredients and measurements on this one are purely a little of this and a lot of that.  Adjust to your family's taste/heat level.

3 - 4 Vidalia onions (pick out the flattest ones you can find)
1 qt. buttermilk
2 - 3 T. hot sauce (your choice)
2 cups self-rising flour
1 t. salt
1 t. ground cayenne pepper
Peanut Oil

Heat oil in deep fryer to 360 degrees.  In a large, wide bowl, combine buttermilk and hot sauce.  In another large, wide bowl, combine flour, salt and cayenne.  Slice onions into 1/2 inch slices and separate into rings.  Soak in buttermilk mixture until oil reaches 360 degrees.  With a fork, remove onion ring slices from buttermilk mixture and dredge in flour mixture.  Place onion rings a few at a time into oil and let fry until they reach the shade of golden, crispy goodness you like.  Serve hot. 

This is another one of those recipes that will make you lots of lifetime friends.  I promise.
