Whole Wheat Pita Stuffed with Chicken & Spinach Goodness

 
We love spinach dip during the holidays.  One day, I decided to add some cooked chicken to the dip and then that led to adding some celery, then carrots……. You get the idea.  The filling is better if made the made the day before so the flavors can blend.

2 packages spinach, thawed and squeezed dry
1 large chicken breast, poached, cooled and shredded
½ cup green bell pepper, diced
2 stalks celery, diced
1 small carrot, diced
1 small jalapeno, diced
2 green onions (white and some green), chopped fine
¼ cup finely diced water chestnuts
½ T. garlic, minced
½ t. red pepper flakes
2 t. thyme
salt and pepper to taste
½ cup mayonnaise
½ cup sour cream
whole wheat pitas

Mix all ingredients together, adjusting amount of mayo/sour cream until desired consistency.  Split open pita and fill with chicken/spinach mixture.  Perfect for hot summer afternoons.
