Roasted Potatoes with Italian Seasoning and Parmesan


I needed a quick side dish for the Italian Burgers and this came together quickly and easily.  I think these potatoes would be great with a roasted chicken as well.

5 medium red potatoes, halved and then cubed into 1 1/2 inch pieces
olive oil
sea salt and freshly ground black pepper
dried Italian seasoning
Parmesan cheese
Parsley

Preheat oven to 375 degrees.  In a large bowl, placed cubed potaotes.  Drizzle with olive oil and then season to taste with salt, pepper and Italian seasoning.  Mix well with a large spoon and then place on a large baking sheet in a single layer.

Bake for 20 minutes or until fork tender.  Stop halfway through to turn so all sides of the potatoes roast evenly.  When done, sprinkle with Parmesan cheese and parsley.
