The plethora of zucchini continues and now the perfect little Roma tomatoes are ripening at just the right time. How better to combine these two along with some freshly grated mozzarella. An awesome side dish and I bet the kids would love to help assemble the "boats"!
Slice zucchini in half lengthwise. If needed, slice a little off the bottom of each piece so they will lie flat on the baking sheet. Scoop out the center with the seeds with a spoon. Brush the inside of the zucchini boats with olive oil and lightly salt and pepper. Place the sliced Romas into the groove and sprinkle with bread crumbs.
Bake in a 350 degree oven for about 30 minutes. Remove from oven and sprinkle with fontina, mozzarella or parmesan or a mixture of your favorites. Place under the broiler until the cheese is melted and browned.
