Apple Cranberry Pecan Bread




I was in a bread baking mood yesterday and here's the result. This bread has an excellent crumb and the tartness of the cranberries pairs well with the apples.

1 3/4 cups all-purpose flour
3/4 cup sugar
1 tablespoon baking powder
1/2 t. salt
1/2 t. ground cinnamon
1/2 t. ground nutmeg
2/3 cup cranberry juice
5 1/3 T. unsalted butter, melted and cooled slightly
1 t. pure vanilla extract
2 large eggs, lightly beaten
1 cups coarsely chopped golden Delicious apples
1/2 cup Craisins
1/2 cup coarsely chopped pecans

Preheat oven to 350 degrees. Grease a 9 x 5 x 3-inch loaf pan.

In a large bowl, whisk together flour, sugar, baking powder, salt, cinnamon and nutmeg making a well in the center. Stir in the liquid ingredients until just combined, being careful not to overmix. Gently stir in the apples, dried cranberries and the pecans.

Pour the batter into prepared pan and bake for 55-60 minutes or until a cake tester inserted into center of loaf comes out with moist crumbs attached. Do not overbake.
