Mardi Gras Eggs


This isn't so much of a recipe as it is a method.  Beautiful deviled eggs topped with boiled shrimp, crawfish tail meat and/or crab meat.  In fact, instead of topping them, any of those would be good mixed into the filling mixture. 

Boil eggs until hard and shell.  Cut in half lengthwise and remove yolks.  In a small bowl, mash yolks and add a spoonful or so of rémoulade sauce.  Fill whites with the filling and top with either shrimp, crab or crawfish.
