Roasted Brussels Sprouts


Even if you think you don't like Brussels sprouts, please try them one more time.  Roasted vegetables with a little salt and pepper and seasonings bring an entirely different flavor to the table.  Ha.  To the table....get it?
1 pound Brussels sprouts, if some are much bigger than the rest, slice in two vertically
olive oil
salt and freshly ground black pepper
McCormick's Mediterranean Seasoning blend
Preheat oven to 425 degrees.  Toss Brussels sprouts with olive oil and put in a shallow baking pan.  Sprinkle with salt, pepper and seasoning blend.
Roast in oven for 15 - 18 minutes until they begin to brown.  About halfway through roasting, give them a quick stir so they brown evenly.
Serve simply as is straight from the oven or spritz with a lemon juice or balsamic vinegar.
