Crab and Broccoli Quiche




A friend made this delicious crab and broccoli quiche a few weeks ago for our dinner.  Just absolutely delicious and rich and creamy and ........perfect.

You will need the pastry for one quiche.  Store bought or use this recipe for the crust.

2 cups flour
3/4 cup Crisco
1/4 cup shredded Cheddar cheese
pinch of salt
2 eggs
splash of milk
1/2 t. minced rosemary

Cut the flour and Crisco together in a medium bowl until the mixture resembles coarse crumbs. Add remaining ingredients and mix together until a smooth dough forms. Form into a ball and chill 2 or 3 hours.

Remove from refrigerator and roll out into a circle that can be easily fitted into your baking dish. Bake 6 minutes at 350 degrees.

Now for the filling:

Mix together the following ingredients in a large bowl:
8 oz. lump crab meat (picked over carefully for shells!)
8 oz. heavy cream
3 eggs
1 cup chopped broccoli
1 cup thinly sliced green onion
1 cup shredded Swiss cheese
1/2 cup goat cheese
1/4 cup freshly grated Parmesan cheese
dash of Old Bay Seasoning
dash of salt & pepper
1/4 t. (EACH) parsley, chives, ground nutmeg

Bake at 350 degrees for 35-40 minutes until filling is set. Remove from oven and add additional grated Parmesan cheese on top before serving.
