This morning I decided I'd make some baked eggs with prosciutto. This was my first time to attempt these and I baked for 15 minutes. This assured that the whites were completely cooked, but it also resulted in hard cooked yolks. If you'd like runny yolks, check the eggs at about 10 minutes.
This recipe will make four servings.
8 slices of prosciutto
4 eggs
salt and pepper
1 t. chopped fresh basil
1 t. chopped fresh oregano
1/2 cup shredded mozzarella
Preheat oven to 350 degrees.
Lightly butter four ramekins or individual shallow baking dishes.
Layer two slices prosciutto into each baking dish.
Carefully break 1 egg onto the top of the prosciutto and lightly salt and pepper. Sprinkle with the herbs.
Divide the cheese on top of each serving.
Bake for 10 - 15 minutes depending on how done you'd like the yolks.
