Russian Salad a/k/a Salad Olivier


This is the most traditional salad of Russia. Most families have their own version. Our guests certainly enjoyed it as the salad portion of our 2014 Winter Olympic Russian Meal.

4 medium size potatoes, diced
3 medium carrots, diced
5 eggs, hard boiled, chopped
1/2 cup cubed bologna or ham
1/2 cup green peas, canned or frozen peas which have been thawed
1 bunch green onions, thinly sliced, white and some green
1 bunch dill, stems removed, chopped
3 T. pickle relish
Ground black pepper and salt to taste
Mayonnaise to taste

Boil potatoes and carrots in advance and make sure they cool to room temperature before you make the salad.

Put the cooled potatoes and carrots in a large bowl. Add remaining ingredients and mix well.

Serve immediately.
