Spicy Pimento Cheese


Y'all know that I am on the constant trail to try different flavor profiles in the classic pimento cheese.

I decided this go around to try a spicy version. Oh my...yes. This worked great.

8 oz. block of sharp cheddar cheese
8 oz. block chipotle white cheddar cheese
1/2 - 3/4 cup mayonnaise
5 oz. diced pimentos, drained
1 small jalapeno, stemmed, seeded and finely minced

Using either a food processor or a box grater, grate both cheeses and put in a large mixing bowl.

Slowly stir in the mayonnaise. You can add either more or less to get the consistency you want. Fold in the pimentos and jalapeno and make sure it's well combined.

Refrigerate until ready to serve. If you can make it a few hours before or even overnight the flavors will have time to blend.

Serve with tortillas chips.
