Ham & Potato Frittata


One of my favorite ways to enjoy the New Year's ham leftovers is breakfast!  I decided this morning that a frittata would be a special breakfast treat.  Frittatas are a great way to use your creativity.  Today I used some Yukon gold potatoes, a little onion, that great ham and cheddar.  You could easily add more vegetables such as peppers, mushrooms, broccoli....see?  Get creative!  

1 T. butter
1T. olive oil
1 cup peeled and cubed Yukon gold potatoes
1/4 cup finely chopped onion
1/2 cup chopped ham
3 eggs
3 egg whites
3 T. whipping cream
1/2 cup shredded mild Cheddar cheese
salt and pepper to taste
1 T. chopped chives

In a 10 inch ovenproof skillet, over medium heat add butter and olive oil.  Add the potatoes, onion and ham.  Add a little salt and pepper.  Let cook, stirring frequently until potatoes are tender. 


In a medium bowl, whisk eggs, egg whites and whipping cream.  Using the back of a spatula or spoon, pat the vegetables into a single layer.  Slowly pour the egg mixture over the vegetables and lower heat to low.  Do NOT stir.


 Preheat broiler.

Let the frittata cook, until the edges begin to set.  Sprinkle the cheese on top.


Place in the oven under the broiler.  Watch carefully, until the top is well browned and the frittata is cooked through.

Remove from oven and sprinkle with chopped chives.  Let's rest a minute or two, slice and serve.
