Jazzy Dirty Rice


This dish evolved out of the post I made yesterday using Zatarain's Dirty Rice.  I decided to add some ingredients and it resulted in an entirely new dish.  And I liked this one a lot!

1 box prepared Zatarain's Dirty Rice Mix (I just ground chuck as my protein.)

2 T. olive oil
1 large onion, chopped
1 large green bell pepper, chopped
4 garlic cloves, minced
1 14.5 oz can of diced tomatoes
1 - 2 t. Creole Seasoning
Chopped Parsley for garnish

Prepare the Dirty Rice according to the package directions and set aside.

Add olive oil to a large skillet, over medium high heat.  Add onion and bell pepper and let cook until vegetables begin to soften, but not brown, about 5 minutes.  Stir occasionally.

Reduce heat to medium and add garlic and let cook one minute. Add tomatoes and, stirring frequently, let mixture heat through.

Add prepared Dirty Rice mix along with the Creole Seasoning.  

Lower heat to low and let cook for a few more minutes until all the flavors combine.  Serve immediately and garnish with chopped parsley.
