Home Cooking in a Hurry: Spicy Chicken Milanese


Another home run grand slam with this Home Cooking in a Hurry recipe.  Start to finish 22 minutes. The recipe clearly states it's Spicy and it is.  If you aren't a fan of a little heat, either omit the cayenne or reduce the amount stated.

Once the chicken is browning, steam some broccoli and cook a package of your favorite noodles.  I used Knorr's Butter and Herb.

Excellent for a quick weeknight meal and impressive enough for that special someone on a weekend.

2 large eggs
3 T. Dijon mustard
1 1/2 t. ground cayenne
Kosher salt and freshly ground black pepper

1 1/2 cups panko
Four 3 oz. thin sliced chicken cutlets (1/4 inch thick)
1/2 cup plus 1 T. olive oil
2 cups grape tomatoes, halved
1 T. fresh lemon juice
1/4 cup chopped parsley
Shaved Parmigiano-Reggiano cheese, for garnish

In a pie plate, beat the eggs with the mustard and cayenne and season with salt and pepper.

Spread the panko in another pie plate.

Dip the chicken in the egg mixture, then dredge in the panko; press to help it adhere.

In a large skillet, heat 1/2 cup of the olive oil until shimmering.  Add the chicken and cook over moderately high heat, turning once, until browned and white throughout, 5 -6 minutes.  Transfer the chicken to plates.

Meanwhile, in a bowl, toss the tomatoes, lemon juice and parsley with the remaining 1 T. of oil. Season with salt and pepper. Spoon the tomatoes over the chicken, garnish with the cheese and serve.

  2. I hope you enjoy it. We had leftovers tonight over regular spaghetti with marinara and it was even better than last night!
