Parmesan & Pepperoncini Pasta Salad


I love to take Betty Crocker Suddenly Salads and dress them up a bit.  Last night I had a few Roma tomatoes that were about to be too ripe and freshly shredded Parmesan and this time instead of adding red pepper flakes, Pepperoncini pepper stepped up to the plate (see what I did there?) and added a great flavor to this boxed pasta salad.  

Betty Crocker Suddenly Salad (Classic Version)
3 T. water
2 t. olive oil
freshly ground black pepper
3 Roma tomatoes, roughly chopped
3 - 4 Pepperoncini pepper, roughly chopped (add more if you want more heat)
Freshly grated Parmesan cheese

Cook the pasta in boiling water until done, about 10 - 12 minutes.  Drain, rinse with cold water and drain again.  In a medium bowl, combine the seasoning packet with water, olive oil and black pepper.

Add in the drained pasta, tomatoes and chopped peppers.  If you like, add in some chopped black olives as well.

Top with Parmesan cheese and serve.
