An entirely different pesto than the normal basil/pine nut version. Cilantro and almonds take center stage for this pesto and it was amazing. Grilled flank steak thinly sliced and topped with this delicious pesto was a great change of pace.
I'm sure the pesto would be great on burgers or shrimp tacos! Yum.......
3/4 cup fresh cilantro
2 T. slivered almonds, toasted
1 T. chopped seeded jalapeno
1/8 t. salt
1/8 t. black pepper
1 garlic clove, chopped
3 T. plain yogurt
1 1/2 t. fresh lime juice
1 (1 lb.) flank steak, trimmed
Preheat grill.
Place five 6 ingredients in a blender and process until finely chopped (about 15 seconds). Add yogurt and juice and process until smooth.
Place flank steak on grill rack coated with cooking spray and grill 6 minutes per side or until desired degree of doneness. Cut steak diagonally across grain in thin slices.
Serve steak with pesto.
