Loaded Beef & Bean Nachos


Yes, the pintos make yet another appearance.  Three different meals from 1 pound of dried pinto beans.  That makes economical sense anyway you dice it.  Dice it....get it?  Anyway.

The secret here is to have the meat and bean mixture and the rice HOT.  Yes, this is a leftover meal from our beef and bean burritos from the night before.

Place your tortilla chips on a plate.  Heat the beef and beans and rice until both are very hot.  Spoon the rice over the chips and then top with the B & Bs.  Next, add your finely shredded cheese.  The heat from the savory items will automatically begin to melt and soften the finely shredded cheese.

Sprinkle with the onions, jalapenos, tomatoes and add the sour cream.  Of course, you could add cilantro, avocado or guacamole, salsa or picante sauce.
