Creamy Italian Dressing


I'm doing everything I can to NOT purchase ready made salad dressings. The main reason is the sugar content. The other reason is all the preservatives and ingredients which I can't pronounce. And when you stop and think about it, when you have all the fixings for a delicious salad dressing in your fridge and pantry, why wouldn't you just whisk up a great dressing in just a few minutes?

This dressing gets better a day or two after making it and it's also very easily doubled. The  ingredients as I list them make about 3/4 cup. But since this is great on not only tossed salads, but on pasta salads, burgers, roast beef sandwiches or wraps.....go ahead and make the doubled recipe version.  

1/4 cup white wine vinegar
1 t. dried Italian seasoning
1/4 t. dried minced garlic
1/4 t. onion powder
1/4 t. red pepper flakes
dash of salt
few grinds of black pepper
1/4 cup freshly grated Parmesan cheese
3 T. mayonnaise
1/2 cup extra virgin olive oil

Add all ingredients except olive oil to a small mixing bowl. Whisk until combined. Slowly add olive oil while you whisk like crazy. You can store in the fridge about 2 weeks, but it won't last that long.
