Stewed Potatoes


My mother made these at least weekly when I was a little girl. I adore all things potato, so it's a given, I would love these. Very simple to make, but with comfort food flavor, these are an excellent side dish with roasted pork, beef, or chicken.

6 - 8 medium potatoes, peeled and cut into large cubes
water to cover
1 t. salt
2 T. flour
4 T. water
3 T. butter
1/2 cup milk
1 t. onion flakes
salt and pepper to taste

Place potatoes in a medium saucepot, cover with water and add 1 t. salt. Bring to a gentle boil and cook only until potatoes are fork-tender.

Mix the flour and 4 T. water in a small bowl. Gently add the flour/water mixture into the pot with the potatoes and allow to cook for a few minutes to begin to thicken the liquid. 

Add butter, milk, onion flakes, and salt/pepper. 

If you need to thicken the sauce a little, add more flour. If it becomes too thick, add a little more water or milk.

  1. I agree, nothing brings back childhood memories like Stewed Potatoes. I have always wanted to can these so I could have them anytime I wanted!
