Beer Braised Brats with Onions and Kraut

It's Oktoberfest season with thoughts of brats, beer, and kraut! I used a combination of braising the brats and onions in beer in a cast iron skillet, THEN grilling the brats to brown and crisp them up! If you don't want to grill them, simply braise and then place on a hot grill pan or in a hot skillet to get the same result.

1 package of Brats
2 medium yellow onions, thinly sliced
2 Oktoberfest style beers
Buns or Hoagie Style Rolls
Mustard
Bavarian style Kraut

In a large skillet, place brats and onions. Pour the beer into the skillet and turn heat to medium. Bring the beer to a gentle simmer. Cover and let the liquid reduce by half. OR place the skillet on the grill and follow the same steps.

Remove brats from the skillet and place directly on the grill. Let the brats cook until well browned and cooked through.

OR you can place them on a grill pan or another skillet and cook until browned.

Remove from grill (or skillet) and place cooked onions on top of the brats.

Place brats into the buns, top with the onions, kraut, and mustard. Enjoy!
