Baked Panko Crusted Ocean Perch

Last night was my first time to prepare, or eat, Ocean Perch. Perch is a very mild fish and is easy to prepare. A neat thing about this type of fish, is that the surface of the perch actually changes color when cooked from a milky white to a distinct brown color. That provides an excellent visual guide to ensure that your fish is properly cooked.

I dipped in an egg wash and then coated with seasoned panko bread crumbs. 15 minutes in the oven and we're ready to eat!

1 lb. ocean perch fillets, rinsed and patted dry with paper towels
1 egg, lightly beaten with salt and pepper
1 T. fresh lemon juice
3 cups panko bread crumbs
salt
1 - 2 t. lemon pepper 

Preheat oven to 350 degrees. Line a baking pan with parchment paper and spray with non-stick spray.

Add beaten egg and lemon juice to a shallow bowl and mix with a fork. 

Add panko bread crumbs to a shallow plate and mix in salt and lemon pepper.

Dip fish fillets into egg and then press into panko bread crumbs. Place onto baking sheet. Repeat with remaining fish.

Bake for 18 - 20 minutes until fish has darkened and flakes easily with a fork. Serve with lemon wedges.
