Frito Chicken Chili Pie with pepper jack cheese

We're all familiar with Frito Chili Pie. But what about those times you make a pot of chicken chili? Guess what? This version is as delicious as the original one! Leftover chili doesn't have to be the same old bowl of chili with crackers for Night #2..... or Night #3.

You'll want to limit the amount of liquid in the chili when you rewarm for this meal. Too much liquid will make your Fritos soggy.  And a soggy Frito is a sad Frito.

Rewarm your leftover chicken chili or dip it fresh from the pot if you want this as a main dish meal.

Layer a nice amount of Fritos on your plate. Ladle a nice serving of chicken chili over the Fritos and top with freshly shredded Pepper Jack cheese. Garnish with sour cream and/or cilantro.
