Cole Slaw with Garlic and Red Onions


I'm always searching for different ways to make cole slaw. Sometimes, I chop the cabbage. More likely than not, I shred just because that's the version I grew up eating. I like a mayo based slaw, but vinegar is always an ingredient because I do like it tangy! 

If you're a garlic lover, you need to give this one a try. The Garlic Infused Olive Oil along with the minced garlic is a great change from your regular recipe.


4 cups shredded green cabbage
1 cup Duke's mayonnaise
1 T. Garlic Infused Olive Oil
1 T. red wine vinegar
1/4 cup diced red onion
1 t. minced garlic
1/2 t. salt
1/2 t. freshly ground black pepper


Place the shredded cabbage in a bowl and lightly sprinkle with kosher salt. Toss to distribute the salt. Set aside for 10 - 15 minutes

In a medium bowl, whisk together the mayonnaise, olive oil , and vinegar. Stir in the diced red onion, garlic, salt, and pepper.

Rinse cabbage in a strainer with cool water. Place in a salad spinner to remove all the remaining liquid. Place cabbage in a large mixing bowl and pour dressing over the cabbage. Stir to combine. Taste and add additional salt and pepper if needed.

Refrigerate until ready to serve.
