Hot Tomato Grits from Elizabeth's Gourmet Creations


My friend has a business with a wide variety of dip mixes, seasoning blendings, cheese ball fixin's, and the like.  I've not tried one that I didn't love.  At a recent Fall Festival, I met up with her at her booth and was very intrigued by one of the new (to me) products:  Hot Tomato Grits.  The "dividing line" on the package is from the sun shining through the window!


I purchased a package that day with the express intent of making them for Sweet Harold's birthday brunch.  

Here are the instructions:

Bring 6 cups of water to a boil and slowing add packet of grits, constantly stirring while adding to prevent lumping.  Turn heat down, add 2 cups of milk and continue stirring until desired consistency.  Add 2 1/2 cups of shredded cheddar cheese, stirring gently.

When cheese is completely melted, transfer to a heated crockpot if you are not serving them immediately.  

Optional Toppings:  Garnish with pan-seared shrimp, hot sauce, additional cheese, crumbled bacon, diced tomatoes, etc.

This dish was super fast and easy to make.  The flavors are subtle and balanced.  Not one flavor overpowered another.  I would love to make this again and include shrimp.
